The Rundown

Water into Wine (WIW) is an experimental restaurant project with the mission of improving the efficiency and footprint of restaurants via a series of Sunday dinners and eventually a flagship location. The hope is to completely redesign all traditional restaurant practices. Restaurants are great places for people to enjoy the company of friends and family --But they can be better.

A dedicated volunteer, Chris Devlin, who has worked closely with this project will be coming straight from the Rockaways on Sunday evening to speak with dinner guests. If you’re interested, you can sign up with Chris to volunteer in the coming weeks.

Secondly, we have finalized a fantastically talented musical guest for an after dinner performance. We are keeping her identity a secret for now, but we hope that you’ll sign up for the dinner in order to find out who she is, and on Sunday be treated to a spectacular performance.

Last but not least, Helena Schouenborg, a lovely chef, yoga instructor, and infinitely talented friend has joined the WIW team as a consultant and chef. She’ll be there on Sunday helping with cooking, and speaking about her experiences as a vegetarian chef!

We are really looking forward to this launch event, and are waiting to hear back from several cutting edge visual and environmental artists about a potential post-dinner workshop.

About your Host:

Vanessa P.

Vanessa Pope is the chef and founder of the Water Into Wine series. She was raised in Minnesota, Wisconsin, and California. She attended Harvard from 2003-2007 where she studied French, film production and sociology. After school she spent two years working in Paris, teaching English to stockbrokers and bartending at night clubs. She has spent the last five years living in Los Angeles and working with several farm to table restaurants at the Los Angeles County Museum of Art. After years of working in restaurants (in literally every capacity-- from dishwasher, to busgirl, to waitress, to hostess, to manager, to sales manager, to executive chef), she has decided that something must change in the restaurant industry. Water Into Wine represents her belief that the restaurant industry is in critical need of an overhaul.

About your Music Performer:

Kavita Shah

Winner of the 2012 Downbeat Student Music award for Best Graduate Jazz Vocalist, Kavita Shah is an emerging singer, composer, and arranger. A native New Yorker of Indian origin fluent in Spanish, Portuguese, and French, Ms. Shah incorporates elements of Cuban, Brazilian, Malian, and Indian music into her jazz-based repertoire. She leads her own quintet as well as the “3rd World Orquestra,” a 13-piece ensemble featuring a traditional jazz rhythm section joined by strings, voices, kora, and tabla. She plans to record her debut album in late 2012.

About your Music Performer:

Olli Hirvonen

Olli Hirvonen is a Finnish jazz guitarist currently based in New York City. He is the most accomplished Finnish guitarist of his generation, having already been chosen as the Artist of the Year of the Pori International Jazz Festival 2011 and having an international caree well on it's way.

About your Co-chef:
